| directions | The night before, leaving the potato skins on, boil potatoes. Refrigerate all night. The next day, peel the potatoes and grate them. Add cheese, cream of chicken soup, sour cream, and seasonal, salt, and pepper to taste. It is best if you mix all this with your hands! (It'll be cold, but you'll love the nicely mixed results.) Make sure the consistency is not too mushy/not too dry.
