| 1 | small | onion, finely chopped | | 1/2 | | red bell pepper, seeded, finely chopped | | 1 | | fresh red chile pepper, seeded, finely chopped | | 2 | tablespoons | olive oil | | 10 | | pitted green olives | | 6 | ounces | Italian Pork sausage, skinned and broken up | | 1 | pound | frozen spinach | | | | salt and pepper to taste |
| directions | Saute the onion, bell pepper, and chile pepper in the oil in a large saucepan over medium heat for 5 minutes or until the onion is softened.
Add the olives and sausage. Saute over high heat for 3-4 minutes, or until the sausage is browned.
Add the spinach and saute over high heat for 2 minutes.
Cover and simmer over low heat for 10 minutes, or until the spinach is cooked. Stir several times during cooking.
Season with salt** and pepper. Serve over hot beds of rice.
**Also really good when you omit the salt and season the rice with soy sauce. |
