1  small  onion, finely chopped
1/2    red bell pepper, seeded, finely chopped
1    fresh red chile pepper, seeded, finely chopped
2  tablespoons  olive oil
10    pitted green olives
6  ounces  Italian Pork sausage, skinned and broken up
1  pound  frozen spinach
   salt and pepper to taste

directions
Saute the onion, bell pepper, and chile pepper in the oil in a large saucepan over medium heat for 5 minutes or until the onion is softened.

Add the olives and sausage. Saute over high heat for 3-4 minutes, or until the sausage is browned.

Add the spinach and saute over high heat for 2 minutes.

Cover and simmer over low heat for 10 minutes, or until the spinach is cooked. Stir several times during cooking.

Season with salt** and pepper. Serve over hot beds of rice.

**Also really good when you omit the salt and season the rice with soy sauce.
